Summerhall’s cask story begins with the search for good oak. Its 2022 brochure traces cask sourcing for limited oak-aged gins back to 2015, drawing on casks from across Scotland. Five casks stacked like a hen coop in a Highland warehouse became part of the story behind The Broody Hen name.
The choice of oak helps shape a whisky’s aroma, texture and colour. The brochure describes American oak, including first-fill and second-fill bourbon casks, for the inaugural blended release. Private cask conversations begin with that same attention to the character of the spirit and its intended use.

A second maturation can build another layer of character on the aromas and texture developed in bourbon oak. The brochure describes 6–24 months as a typical finishing example.
