From barley to malt

Summerhall’s blog begins its explanation of single malt with the grain. Malted barley is barley that has been allowed to germinate and then dried. It is a useful starting point for understanding a bottle whose label may say far more about age, oak and flavour than about its raw material.

Malting, fermentation, distillation and maturation are separate stages. Reading them separately helps us avoid asking one word on a label to explain the entire whisky.

What does ‘single’ describe?

For Scotch whisky, the Scotch Whisky Association defines single malt as whisky distilled at one distillery from water and malted barley, without other cereals, using batch distillation in copper pot stills. ‘Single’ refers to the distillery—not to one individual cask.

Single malt and single cask therefore answer different questions. Recognising that distinction is a small but useful step towards reading whisky descriptions more carefully.

Three questions to bring to the label

  • What is the grain? Begin with what malt tells you about the raw material.
  • Where was it distilled? Consider the distillery information separately.
  • Which casks were involved? Look for the maturation history rather than assuming it from the category.

These are clues to a whisky’s background, not a ranking of quality. A category alone does not tell us how every bottle will taste.
